Simple Italian Dishes

One of the first dishes I remember learning how to make was simple, easy and a few ingredients.

Aglio, olio e peperoncino. Yum! I love it so.

This dish was my dinner, sometimes lunch when I was just starting out in Florence. The great part about this dish is it doesn’t take a lot of time.

First, cut up the garlic (aglio) really fine.

Then put the garlic in the pan with about a tablespoon of oil, maybe more.

Add the red pepper flakes(peperoncino) as spicy as you want it.

Saute for a few minutes until the garlic becomes fragrant. Be sure to watch it so it doesn’t burn. My husband always burns it.

Toss the garlic and red pepper flake sauce with your favorite spaghetti and then add some grated parmigiano reggiano cheese and MANGIA!

Insalata mista (mixed salad) is why love to simplify my salads. We put a lot of crap on our salads, way too much. Try this.

Toss your favorite lettuce with olive oil, balsamic vinegar, tomatoes(pomodori), cucumber(cetriolo), salt and pepper. THAT’S IT. Simple. Healthy. Italian.

If you want to add something, add tuna, chickpeas(ceci), or some mozzarella cheese. But that is all. So good and so simple.

For meat lovers, my husband has a great way to cook any type of meat.

Little olive oil in the pan, add the meat(chicken, beef, pork). Saute to your preferred temperature. Remove from heat, add salt and pepper and pour the oil from the pan onto your piece of meat.

Simple. Delicious.
